As promised 2 weeks ago, I had mentioned that I will share the yummilicious green tea cookies recipe that we had made for Teacher’s Day 2012. Well here it is now and as usual I had gotten this recipe from my favourite bake book- “Okashi- Sweet Treats Made With Love” by Keiko Ishida as mentioned in this post and here as well. I followed everything to the T except that I had insufficient green tea powder but the result of it still turn out quite well though.
Here we go:
- 240g Pastry Flour or Top Flour, chilled (I used Top Flour, Sieved and put aside)
- 10g of Green Tea Powder (the original recipe calls for 15g)
- 150g Unsalted Butter (room temperature, cubed)
- 130g Icing Sugar
- 2 Egg Yolks
- A pinch of Salt
- Granulated Sugar (as needed)
- Egg White (Beaten)
- Green Tea Leaves (Optional for Garnish)
Method (With Step-By-Step Photos)
- Cream butter till creamy and pale to incorporate air.
- Whisk in sugar and salt till light and fluffy.
- Beat in egg yolks 1 at a time.
- Sift in flour and green tea powder.
- Fold in the flour and green tea powder quickly till well-combined.
- Place the dough on a clean cling wrap.
- Wrap and chill for about 15min.
- Divide the chilled dough into half and shape it into a 3.5cm log, wrap it in cling
wrap and chill till firm. Repeat with the other half.
- Pre-heat oven to 170°c. Cut the firm dough into 7-mm thick pieces.
- Dip the edges in granulated sugar.
- Place cookies on baking tray lined with baking paper and
brush a little egg white over it.
- Garnish with Green tea leaves (Optional).
- Bake for 25mins in preheated oven.
- Place on cooling wrack and leave to cool.
**Things to Note:
- If the dough is not going to be used immediately, wrap with cling wrap, store it in n air-tight container or ziplock bag. Cookie dough can be kept for up to 2 months in the freezer.
- Cookies can be stored in an airtight container at room at room temperature for up to 10 days.
